Crispy pandan pinenuts chocolate cookies



The picture of the cookies were taken from a food blog.
No recipe given.
But looks good.
Can't do it here in UK as oven in house is no good. (And no pandan leaves in Cambridge!. Temperature was -8 degrees celcius yesterday night)
Please try it out and let me know the results.

Here's my recipe-

Ingredients:

250 gm. Butter
10-15 stalks of pandan leaves- Add about 30mls of water and blend them together. Obtain the pandan juice.

75 gm. castor sugar
75 gm. brown sugar
1 egg (medium size)
350 gm. plain flour
1 tsp. bicarbonate of soda
200 gm. chocolate chips
100 gm. pinenuts (or any nuts you prefer i.e. sunflower, macadamia, walnut, almond, pistachios etc. Roast them a little to bring out the fragrance and flavour)


Method:

(1) Beat butter, pandan juice, sugar and egg with electric mixer until smooth.
(2) Add in flour and bicarbonate of soda and stir in chocolate chips and pinenuts.
(3) Put a 1 tablespoon amount of mixture onto pre-greased trays and bake at 180C for 15 mins. or till golden brown (Oven would be with both top and bottom heating on).
(4) Cool on wire rack before storing in cookie containers.

It should produce crispy cookies.

The oven temperature's effects might differ from each oven to another. Please watch the cookies while baking initially to get the appropriate oven settings for your own oven.
